“Of everything, ask what it is in itself… and celebrate that.” This is how our chef Maxime Lesobre describes his work. His watchword: taste. His career is a chronicle of encounters with the great and the good. Before coming to “The Amphitryon” restaurant, Maxime worked his magic at a number of prestigious establishments, in particular at the Palace Royal Monceau, and at the “Grande Cascade”, where he worked alongside chef Frédéric Robert. He was originally hired and trained by three-star chef Yannick Alléno.
With the help and guidance of culinary historian Jean Claude Ribaut, Maxime is here to pay homage to the past, drawing inspiration from here and there, but never losing sight of classical French cookery. Brilliance and taste are the hallmarks of Maxime Lesobre’s gourmet journey through the glories of the past.
